WINEMAKING
Project Paso wine was raised in Paso Roble’s unique growing region receive very little rain and experience a long growing season. Known as a hot and arid region of central California, Paso is notable for averaging more than 300 days of sunshine every year, which promotes classic Bordeaux grapes to ripen and fully develop, yielding wines with a signature full-bodied and jammy concentrated flavor.
TASTING NOTE
Our Cabernet Sauvignon features aromas of black cherry, toasted oak and warm baking spice. Flavors of juicy blackberry are framed by deeply toasted oak spice. The palate is complex with a nice transition from ripe berry fruit at the front through to a long, lasting finish, thanks to bold tannins and even structure.
